Don't rule out the GSMNP. It has plenty of trails that offer a wide variety of experiences. When I lived near the Park, I was fond of going up to the AT and day-hiking the high country. Charlie's Bunion and Andrew's Bald were favorites. There are plenty of primitive shelters in the high country and quite a few more modern campgrounds at the lower elevations. Reservations would be a good idea. The lodge on Mt. LeConte was always been a favorite overnight destination. I don't know if it is still open but probably requires very advanced reservations if it is. The Chimneys, Abrams Creek, and Laurel Falls are always pleasant hikes. Mt. Cammerer is a favorite with a grand view.
