Current favorite is the Furuno 1150

Which through hull 2 or 3 KW transducer is the best match?

Fishing in up to 3,000 fy of water

I think the 2kw would suit you fine but I think with the fcv1150 you can get a transducer that allows you to select optimal output between 2 & 3kw AND tune frequency. They just get expensive.

Look into the Airmar R209 or the R309. I have installed a few Furuno FCV1100's w/ these transducer's. Each time I have been extremely impressed. Both these ducers are broadband and have excellent target definition. I've had a few customers tell me that they can watch their deep drop weight go all the way down

If that unit has the option to go 3 KW then you have to do that! It would be nice reading down to 3,000 feet while travelling 50 mph across the ocean. That would be cool!!
