I got this from my Grandfather (long gone). 8 hardboiled eggs. 1Lb beets I use canned. 1 cup applecider vinegar. 1/3 cup sugar. 3/4 tsp salt.1/4 cup water. 1 large onion. Put beets and beet juice in a saucepan. Add vinegar,sugar,salt, and cook until the sugar is dissolved. I put my peeled eggs,sliced onion, and cooled beets in a large jar. Then pour the cooled juice over all. Let it sit in the icebox at least 3days. The longer the better. I have given these eggs to people "who hated pickledeggs". Now they eat these.
