I grinded off a rolled/brushed epoxy job not long ago. Used 120 grit on a random orbit sander. Wiped it down real good with acetone. Then I sprayed it with DuPont Imron. Come out nice man. You just wanna sand it smooth and scuff the surface to give the paint somethin to stick to. Don't sand through the gel coat.

Mint is correct, don't sand through the gel coat, you just want to smooth and scuff it so the paint or primer can get a bite. 120 is about right for that. Different paints and primers have different requirements for the grit size and it's usually printed on the application instructions.

You may need some adhesive remover as the graphics will probably leave that behind. If you have a auto body supply shop nearby they sell a citrus base adhesive remover thats great. Also don't use alcohol to wipe down before painting. Alcohol leaves a residue. Get a 5 gallon drum from the auto body supply it's only about $40 and the quality of the acetone is better than the junk in any hardware store.
